The art of craft ramen in tokyo night markets

Finding a small, hidden yatai stall in Tokyo is the ultimate culinary adventure. The deep, rich tonkotsu broth, simmered for over twenty hours, delivers a savory complexity that is hard to replicate. Paired with perfectly springy noodles, it is the definition of comfort food.

Absolutely. Black garlic oil, or mayu, adds a wonderful smoky depth and bittersweet aroma that balances the rich pork fat beautifully. It is one of my favorite toppings whenever I visit stalls in Kyushu.
